Seafood pie, but make it weeknight easy and Easter fancy 🐟🥧💚 If you’ve got hungry people circling the kitchen, this one is your friend. I do a simple 1:1 swap with FLORA Block and FLORA Thickened Cream, so you still get that proper creamy pie vibe, but it’s dairy free and lactose free. One pot, only cooking 1 dish, FLORA Block and Cream are affordable and bring great value into the conversation. Top it with my quick dill scone lid, no rolling, no stress, bake it up and boom. You look like you tried really hard. Creamy delicious dish. The difference is FLORA. What you NEED 1 onion 3 carrots 3 potatoes 1 head broccoli 100g FLORA Block 1 tbsp crushed garlic 1 tbsp old bay seasoning 1 cup FLORA Thickened Cream 1 kg marinara mix 1 cup vegetable stock For the dough 3 cups SR flour 100g FLORA Block 1 1/4 cups FLORA Thickened Cream 1 bunch dill Salt and pepper What you do Dice the onion, carrot, potatoes and broccoli. Melt 100g FLORA Block with the onion, carrot and garlic. Cook until soft. Add the potatoes and stock and cook until the potatoes are soft. Stir in the old bay, FLORA Thickened Cream and marinara mix. Season with salt and pepper. Rub 100g FLORA Block into the SR flour with your fingertips. Mix in the finely sliced dill and FLORA Thickened Cream to make a soft dough. Tip onto the bench and gently knead into a log. Cut into 12 pieces. Place on top of the seafood filling and bake for 25 minutes at 200C until golden.

It tastes like dumplings, but you build it like a lasagna, then serve it with a quick pickled cucumber salad for crunch. Save it for the tight budget weeks that you still want to eat delicious food! Dumpling lasagna + pickled cucumber salad (serves 4) What you NEED Fresh lasagna sheets $3.69 500g Pork mince $4.49 250g Coleslaw mix $1.99 1 bunch Green onion $2.49 1/2 cup Soy sauce $1.79 4 tbsp Oyster sauce $2.19 1 Cucumber $1.29 2 tbsp Crushed ginger (already in the fridge) 1 tbsp minced garlic (already in the fridge) What you do 1. In a big bowl, mix pork mince, coleslaw mix and sliced green onion. 2. Add garlic, ginger, a 1/4 cup soy sauce and oyster sauce. Plus a dash of white pepper if you have it. Mix really well. 3. Drizzle a little oil and a cup of water in a large saucepan, then lay down fresh lasagna sheets. 4. Add a layer of the mince mixture, then repeat sheets and filling until it’s all used up. 5. Mix another cup of water with an extra splash of soy, then pour it over the top so the sheets cook properly. 6. cover with a layer of baking paper, then pop the lid on. 7. Cook on medium for about 35 to 40 minutes, until cooked through. Add another cup of water over the top halfway through. Pickled cucumber salad 1. Thinly slice cucumber (I used a mandolin), then toss with sliced green onion. 2. THE EASIEST NO-KNEAD FOCACCIA EVER (YES, YOU’VE GOT THIS!) 🍞✨ If you think you can’t bake, this one’s for you. I swear this is the most forgiving, low-effort focaccia recipe ever. No kneading, one bowl, minimal fuss and a big, fluffy, golden reward at the end. If you can stir, you can make this bread. Let me show you how. This easy no knead focaccia is soft on the inside, crispy on the outside and perfect for beginners, busy families or anyone who wants fresh homemade bread without the stress. EASY NO KNEAD ONE BOWL FOCACCIA WHAT YOU NEED 4 cups all-purpose flour, or bread flour 2 teaspoons salt 2 tablespoons honey 2 packets yeast 2 cups hot water from the tap 1/4 cup olive oil WHAT YOU DO I put everything except the oil into a large bowl and mix until there’s no dry flour left. That’s it, no fancy technique required. I cover the bowl with cling wrap and leave it in a warm spot for 1 hour. With wet hands, I fold each side of the dough into the middle. I pour half the olive oil into a baking tray and pop the dough straight in. I cover it again with cling wrap and put it back in a warm spot until it rises and spreads to almost cover the base of the tray. I pour over the remaining oil and gently dimple the dough with my fingers. I sprinkle over flaky salt because focaccia loves it. I bake it in a preheated oven at 180°C for about 30 minutes until golden and fluffy. This Lime and Coconut Chicken with Rice deserves a spot in your weekly rotation — save it for later 🍋🥥 Ingredients: 4 chicken thigh cutlets 1 red onion, sliced 1 bunch coriander (roots and stems for cooking, leaves for garnish) 1 chilli, sliced (optional) 1 tbsp crushed garlic 1 tbsp crushed ginger 2 cups rice 1 can coconut milk 2 limes, sliced 2 cups chicken stock 2 tbsp fish sauce Instructions: Season your chicken with salt and pepper. Heat a little oil in a pan and place the chicken skin side down. Cook until golden brown, then remove from the pan. In the same pan, add the onion, garlic, ginger, coriander roots and stems, chilli, and rice. Cook for about a minute. Pour in the coconut milk, chicken stock, and add the sliced limes. Nestle the chicken back into the pan on top of the rice mixture. Once the liquid starts to boil, reduce the heat to low and cover with a lid. Cook for 15 minutes. Check to ensure the rice is done. If not, let it cook for a few more minutes. Garnish with fresh coriander leaves and a squeeze of extra lime juice for that extra zing. I am so exhausted but also so very excited to be moving into a new home next week. We have been lucky enough to be able to save enough money for a deposit on a house big enough for my kids and grand kids to come home and visit without having to sleep on a blow up mattress in the lounge room. In 2019 weeks moved into a unit and if I’m honest, I should have know I wasn’t a unit girly. I really miss my garden and the space a house gives you to have visitors. We are not moving far but it feels like a big move forward for our family. I’m so very grateful for this opportunity for my family. We have worked and saved hard and now we can enjoy a little bit of our hard work. #stephcooksstuff #newhome #newadventures #family #over50blogger

Hummus 🍴Recipe below and all my recipes are on my website - Easy Recipe Gang.🍴 Homemade hummus recipe with chickpeas, tahini and lemon for an easy budget-friendly dip 🧄 I make Hummus on repeat because it is cheap, quick and so much better than store bought. Hummus is one of those easy basics I always want in the fridge for wraps, snack plates and easy entertaining. Save this for later. INGREDIENTS Homemade hummus What you need 400g tin chickpeas 1 garlic clove Juice of 1/2 lemon 2 tbsp tahini 1/4 cup water METHOD What you do I drain the chickpeas and discard the liquid. I add the chickpeas, garlic, lemon juice, tahini and water to my food processor. I whizz everything for about 2 minutes until super smooth and creamy. If it looks a little thick, I add a splash more water and blitz again. That is it. Creamy, budget friendly homemade hummus for a fraction of the price and ready in minutes. They’re quick, packed with flavour and made with just a handful of supermarket ingredients. You’ll need: 🌮 2 chicken breasts 🌶️ 1 packet taco seasoning 🥣 Chilli aioli 🥬 1 packet coleslaw mix 🌯 1 packet tortillas Method: 1. Slice each chicken breast in half to make 4 thin fillets, then cut each fillet into around 5 tender-sized pieces. 2. Add the chicken to a bowl with 2 tbsp chilli aioli and the taco seasoning. Mix well until every piece is coated. 3. Air fry at 200°C for 15 minutes, or until the chicken is cooked through and golden. 4. In a separate bowl, mix the coleslaw with 1/4 cup chilli aioli until well coated. 5. Heat the tortillas in the microwave for 1 minute. 6. Fill each tortilla with the chicken, top with the creamy coleslaw and finish with an extra drizzle of chilli aioli. ✨ To make it go further: Serve with frozen chips or wedges for an easy family meal. Easy swaps: • Use chicken thighs instead of breast. • Swap the chilli aioli for plain aioli or mayonnaise if you prefer it milder. • Add cheese, avocado, corn or diced tomato if you’ve got them.
