Winter Squash Lasagna Roll Ups

Butternut Squash Cottage Cheese Filling
• 1 cup mashed butternut squash 
• 1 cup Good Culture cottage cheese 
• ½ cup grated parmesan 
• 1 large egg
• 2 tbsp of finely chopped herbs, like thyme or sage
• ½ tsp salt
• A few grinds of black pepper

Creamy Tomato Butternut Squash Sauce
• 1 tbsp olive oil 
• 4 garlic cloves, minced
• ½ red onion, minced
• 1 16oz can of crushed tomato
• ½ cup of mashed butternut squash
• 2 tsp Italian seasoning
• 1 tsp salt
• 1 tsp chili flakes
• A few grinds of black pepper
• ½ cup Good Culture cottage cheese

Assembly
• 14 – 16 lasagna sheets, (cook extra sheets in case some break)
• 1 cup shredded mozzarella cheese, divided
• ½ cup grated parmesan 

Method:

Make the Lasagna Filling
1. Into a medium bowl, mix mashed butternut squash, cottage cheese, parmesan, egg, chopped herbs, salt and pepper. 

Make the sauce
1. In a large pan, heat up olive oil until shimmering.
2. Add the minced garlic and onion, cook down until slightly golden and translucent.
3. Add crushed tomatoes, mashed butternut squash, Italian seasoning, salt, chili flakes and black pepper. Cook for about 10 minutes on med-low heat until sauce is bubbling and thick.
4. Pour sauce into a blender, add cottage cheese and blend until smooth. 

Assemble & Bake
1. Preheat the oven to 350°F.
In a large shallow pan, bring water and salt to a boil, cook 16 lasagna sheets for about 6-7 minutes just until flexible and al dente. Do not overcook.
2. Drain lasagna noodles and place them in a line on a parchment lined baking tray. In your desired baking dish, spoon about half of the sauce into it. Set aside. Spread an even amount of the lasagna filling on each noodle.
3. Sprinkle each noodle with shredded mozzarella and then roll each noodle up.
4. Place each rolled lasagna into the baking dish until all of the lasagna rolls are placed in. Pour the remaining sauce on top, sprinkle more parmesan and mozzarella cheese.
5. Bake for about 30 minutes until bubbly and the edges are slightly crisp.
6. Serve hot and top with more parmesan!

2. Take ~2 tbsp dough at a time and carefully roll into balls. 

3. Preheat air fryer, coating the basket with non-stick cooking spray. 

4. Place balls in air fryer, trying not to overcrowd the basket. Spray with non-stick cooking spray. Air fry for 6-8 minutes at 350F. 

5. Remove from air fryer and cool. While donuts are cooling, whisk together the ingredients for the icing. 

6. Once donuts are cooled completely, dip them in the glaze and let set for ~10-15 minutes. Enjoy!

why make a cheese-stuffed sweet potato when you could make a TWO-cheese stuffed sweet potato? the @good_culture adds protein and extra creaminess, making it so much more satiating.

to make it: 
wash and dry a sweet potato, rub with olive oil, and season with salt and pepper. bake at 300°F until tender, about 1 hour. (I preferred the air fryer version). leave in the turned-off oven or air fryer for a few minutes until it’s still warm but not piping hot. 

slice off the top of the potato and stuff in a few slices of butterkase cheese (or another havarti-like cheese). mash some of the sweet potato down to make room for cottage cheese, then add a big spoonful. season with black pepper. continue to add more cottage cheese as you eat!

Been making so many wonderful, nutritious, and YUM dishes with: @good_culture cottage cheese recently!!!! I love bringing some balance into the holidays without sacrificing flavor so swapping Good Culture cottage cheese in for mayo in this potato salad was a 10/19 choice.  You’ll need baby potatoes (boiled) and then smash them down. Top with olive oil, salt, pepper, and garlic powder before baking for 20 mins at 425 F, flipping halfway through. In a blender, blend 1 full 16 oz container of Good Culture 2% Low Fat Cottage cheese (14g protein/serving!!) with green onion, dill, parsley, garlic, onion powder, salt, and lemon juice. Once the potatoes are done and cooled a little, mix together with your dressing and you are good to go!! It’s such a protein-rich, more balanced option to add to your holiday meals :) #goodculture #goodculturepartner

- spray of avocado oil
- flaky salt and freshly ground black pepper

optional: 1 cup arugula, black garlic

recipe:
1. whisk eggs, cottage cheese and pepper in a bowl
2. heat a non stick pan to medium heat and spray with oil
3. add eggs and continuously stirring for creamy, soft texture
4. cook until desired wetness (i prefer to cook longer for less moisture)
5. season with salt, pepper, black garlic

optional: serve with arugula

Cottage Cheese Cup Ingredients: 
• 1 single serve cup of Good Culture Simply 2% Cottage Cheese
• 1 tbsp of cocoa powder 
• 1 tsp maple syrup 
• 1 large marshmallow or 6 mini marshmallows
• 1 tbsp of chopped dark chocolate 
• 1 tbsp of chopped toasted almonds 

Dark Chocolate Almond Magic Shell Ingredients:
• 1 tbsp of chopped dark chocolate 
• ½ tsp extra virgin cold pressed coconut oil 
• 1 tsp finely chopped toasted almonds 
• Flaky Salt

Method:
1. Add cottage cheese, cocoa powder, maple syrup, vanilla extract and salt into a blender. Blend until completely smooth.
2. Use a pair of kitchen scissor to cut up the marshmallow/s into small pieces.
3. Add the marshmallow, chopped chocolate and almonds into the whipped chocolate cottage cheese mixture and give it a mix until combined.
4. Fill up your single serve cup with the chocolate blended cottage cheese.
5. In a small microwave safe bowl, add the dark chocolate and coconut oil.
6. Microwave the dark chocolate in 15 second increments until the chocolate is just starting to melt. Give it a good stir until smooth and creamy.
7. Add the chopped toasted almonds into the chocolate and give it a mix.
8. Pour the almond chocolate over the blended cottage cheese, top with a sprinkle of flaky salt and pop it into the freezer for about 15 – 20 minutes and you’ll be left with a crackly chocolate topping. Break in with a spoon and enjoy!

Cottage Cheese Egg Salad
Makes about 1 quart 

12 large eggs, at room temperature 
1 pound Good Culture cottage cheese (low fat or full fat)
1/2 cup minced fresh dill
2 tablespoons Dijon mustard 
2 tablespoons drained capers, minced
1/2 medium red onion, minced
Kosher salt and freshly ground black pepper

1. Bring a large pot of water to a boil. Prepare an ice bath. 
2. Gently add the eggs and boil for 12 minutes. Transfer the eggs to the ice bath to chill for at least 5 minutes, then drain and peel. Using a box grater, coarsely grate the eggs, then transfer to a large bowl. 
3. To a blender or small food processor, add the cottage cheese and purée until smooth. Transfer to the bowl with the grated eggs, then add the dill, mustard, capers, and red onion. Stir until everything is well incorporated. 
4. Taste and adjust the seasoning with salt and pepper, then store in an airtight container in the refrigerator for up to 5 days.

FULL RECIPE BELOW
High Protein Healthier Cornbread
1 ½ cups @Good_Culture 4% Cottage Cheese 
¼ cup avocado oil 
2 eggs 
1 tbsp maple syrup 
1 tsp apple cider vinegar
1 cup milk
1 cup all-purpose flour
1 cup cornmeal
1 tsp baking powder 
½ tsp baking soda 
¼ tsp salt 
1 tbsp fresh thyme 
1 cup corn 
½ cup shredded cheese 

Directions 
Preheat oven to 375F. Grease an 8x8” baking pan and line with parchment paper. 

In a large bowl, whisk together Good Culture Cottage Cheese, avocado oil, eggs, maple syrup, and vinegar until well combined. Whisk in milk. 

Fold in flour, cornmeal, baking powder and soda, salt, and thyme until a smooth batter forms. Fold in corn and cheese. Pour batter into prepared baking pan. Bake for 35-40 minutes until a toothpick inserted comes out clean. Cool for 5 minutes before serving.

Spicy Pepperoni Jalapeño Hot Honey Pizza with a @good_culture cottage cheese crust. Don’t knock it until you try it 😉 #ad

Ingredients 
⁃1/4 cup flour
⁃1 tsp baking powder
⁃1/8 tsp salt (reduced because of parmesan)
⁃1/2 cup cottage cheese
⁃1 whole egg
⁃1 egg white (add-in for structure/crispness)
⁃1/4 cup grated Parmesan 
⁃1/4 tsp garlic powder
-1/4 cup pepperoni 
-1/4 jalepeno 
- hot honey (drizzle to you liking)

Steps 
⁃Preheat oven to 400 
⁃Blend Cottage cheese, Grated Parmesan, Egg & Egg White
⁃Mix Dry ingredients in a small bowl and then add the wet ingredients and mix fully 
⁃Pour and spread batter onto parchment paper into an even layered rectangle
⁃Cook for 15-20 Min 
⁃Flip the Flatbread and cook for another 5 min 
⁃Then Layer on Sauce Cheese and whatever toppings of your choice. 
⁃Place back in the oven for 4 min and broil for 1 min 
⁃Drizzle on Hot honey and you are good to enjoy!

RECIPE
🥕Peel 10 medium carrots and set aside 
🥕Prepare the harissa marinade by mixing 2 tablespoons tomato pasta, 2 tablespoons olive oil, juice of 1/2 a lime, salt, pepper and 2 tsp ground cumin
🥕Brush the carrots with the harissa marinade and roast in the oven on a parchment lined sheet pan at 400F for 45-55 minutes until tender and caramelized
🥕While the carrots roast, blend 1 carton 2% milk fat @Good_Culture cottage cheese with juice of 1/2 a lemon, 1/2 tsp lemon rind, 2 tbsp fresh chopped dill, 1 tbsp olive oil and salt and pepper
🥕Spread the cottage cheese mixture on a platter, top with the roasted carrots. 2 tbsp each crushed pistachios and pomegranate seeds, 1 tsp chopped dill and a drizzle of hot honey and serve right away for the perfect holiday side
