#GoodCulturePartner High-Protein Chicken Salad with @good_culture Cottage Cheese!

Here’s how to make it:

-1 lb chicken breast, cooked and chopped
-1 cup @good_culture cottage cheese
-2 tbsp lemon juice
-1 tbsp dijon mustard
-2 tbsp fresh dill, parsley or chives, finely chopped
-1 stalk celery, diced
-1 small sweet onion, diced
-⅛ tsp salt, more to taste
-¼ tsp black pepper, more to taste
-1 tsp garlic powder

1. In a blender or using an immersion blender in a small container, blend Good Culture cottage cheese until smooth and creamy. Pro tip: Blend it right in the container and then you can leave the leftover blended cottage cheese in there! I like to mix the leftover cottage cheese with ranch seasoning for a blended high protein ranch dip.

2. In a medium sized bowl, add all chicken salad ingredients and mix until combined. Enjoy!

Ingredients

* 1 tbsp maple syrup 
* Zest from 1 lemon 
* 2 tsp baking powder 
* ¼ tsp baking soda

Icing 
* ½ cup powdered sugar
* ¼ tsp vanilla 
* 1-2 tbsp milk 

Directions
1.  In a large mixing bowl, whisk together flour, lemon zest, baking powder, baking soda, and salt. Add the blended Good Culture cottage cheese, egg, and maple syrup and stir well with a spoon. Once it starts to come together, fold in blueberries.

2. Take ~2 tbsp dough at a time and carefully roll into balls. 

3. Preheat air fryer, coating the basket with non-stick cooking spray. 

4. Place balls in air fryer, trying not to overcrowd the basket. Spray with non-stick cooking spray. Air fry for 6-8 minutes at 350F. 

5. Remove from air fryer and cool. While donuts are cooling, whisk together the ingredients for the icing. 

6. Once donuts are cooled completely, dip them in the glaze and let set for ~10-15 minutes. Enjoy!

Winter Squash Lasagna Roll Ups

Butternut Squash Cottage Cheese Filling
• 1 cup mashed butternut squash 
• 1 cup Good Culture cottage cheese 
• ½ cup grated parmesan 
• 1 large egg
• 2 tbsp of finely chopped herbs, like thyme or sage
• ½ tsp salt
• A few grinds of black pepper

Creamy Tomato Butternut Squash Sauce
• 1 tbsp olive oil 
• 4 garlic cloves, minced
• ½ red onion, minced
• 1 16oz can of crushed tomato
• ½ cup of mashed butternut squash
• 2 tsp Italian seasoning
• 1 tsp salt
• 1 tsp chili flakes
• A few grinds of black pepper
• ½ cup Good Culture cottage cheese

Assembly
• 14 – 16 lasagna sheets, (cook extra sheets in case some break)
• 1 cup shredded mozzarella cheese, divided
• ½ cup grated parmesan 

Method:

Make the Lasagna Filling
1. Into a medium bowl, mix mashed butternut squash, cottage cheese, parmesan, egg, chopped herbs, salt and pepper. 

Make the sauce
1. In a large pan, heat up olive oil until shimmering.
2. Add the minced garlic and onion, cook down until slightly golden and translucent.
3. Add crushed tomatoes, mashed butternut squash, Italian seasoning, salt, chili flakes and black pepper. Cook for about 10 minutes on med-low heat until sauce is bubbling and thick.
4. Pour sauce into a blender, add cottage cheese and blend until smooth. 

Assemble & Bake
1. Preheat the oven to 350°F.
In a large shallow pan, bring water and salt to a boil, cook 16 lasagna sheets for about 6-7 minutes just until flexible and al dente. Do not overcook.
2. Drain lasagna noodles and place them in a line on a parchment lined baking tray. In your desired baking dish, spoon about half of the sauce into it. Set aside. Spread an even amount of the lasagna filling on each noodle.
3. Sprinkle each noodle with shredded mozzarella and then roll each noodle up.
4. Place each rolled lasagna into the baking dish until all of the lasagna rolls are placed in. Pour the remaining sauce on top, sprinkle more parmesan and mozzarella cheese.
5. Bake for about 30 minutes until bubbly and the edges are slightly crisp.
6. Serve hot and top with more parmesan!

I love adding @good_culture to my childhood favorites like chaat (the best!) for added protein and live and active cultures. Just 1/2 a cup has 14 g of protein! And it’s creamy and versatile!

RECIPE
🔥Poke a sweet potato with a fork in a few places and roast at 450F for 45-60 minutes until fork tender
🔥Slice the sweet potato in half lengthwise to create a boat and put a generous dollop of @good_culture cottage cheese on top 
🔥Add 1 tablespoon rinsed and drained chickpeas, 1 teaspoon finely chopped red onion and a a bit of chopped red chili if you like things spicy 
🔥Add a dusting of salt and chaat masala and a drizzle of tamarind date chutney (available online at and at an Indian grocery store)

1/2 cup minced fresh dill
2 tablespoons Dijon mustard 
2 tablespoons drained capers, minced
1/2 medium red onion, minced
Kosher salt and freshly ground black pepper

1. Bring a large pot of water to a boil. Prepare an ice bath. 
2. Gently add the eggs and boil for 12 minutes. Transfer the eggs to the ice bath to chill for at least 5 minutes, then drain and peel. Using a box grater, coarsely grate the eggs, then transfer to a large bowl. 
3. To a blender or small food processor, add the cottage cheese and purée until smooth. Transfer to the bowl with the grated eggs, then add the dill, mustard, capers, and red onion. Stir until everything is well incorporated. 
4. Taste and adjust the seasoning with salt and pepper, then store in an airtight container in the refrigerator for up to 5 days.

some things just belong in a deep fryer… and mac & cheese is one of them.

Fried Cottage Cheese Mac & Cheese Balls

Mac & Cheese Ingredients
Good Culture Simply Cottage Cheese 2% (16 oz)
Shredded cheddar cheese, divided (3.5 cups)
Salt (¾ tsp)
Garlic powder (½ tsp)
Ground mustard (⅛ tsp)
Butter, ghee, or oil (1 tbsp)
Flour (1 tbsp, gluten-free 1-for-1 works)
Milk (⅔ cup)
Elbow pasta (12 oz)

Coating Ingredients
All-purpose flour (¼ cup, gluten-free 1-for-1 works)
Garlic powder, divided (1 tsp)
Salt, divided (¾ tsp)
Cayenne pepper (pinch)
Eggs, beaten (3 large)
Panko breadcrumbs (1.5 cups)

Instructions

Cook pasta 1 minute less than box directions.

In a skillet over medium heat, melt butter, add flour, and whisk in milk until thickened. Stir in cottage cheese, salt, garlic powder, and mustard. Add 2.5 cups shredded cheddar and cook until melted. Turn to low heat, stirring occasionally while the pasta cooks (needs at least 10 minutes to thicken).

Drain pasta and stir into cheese sauce. Let cool, then mix in 1 cup shredded cheddar. Transfer to an airtight container and refrigerate 3-4 hours or overnight.

Set up a breading station: In one bowl, whisk eggs. In another, mix panko with ½ tsp salt & ½ tsp garlic powder. In the last, mix flour with ¼ tsp salt, ½ tsp garlic powder & cayenne.

Cut chilled mac & cheese into 1-inch squares. Keep half in the fridge while coating the rest.

Dredge bites in flour, dip in whisked eggs, then coat in panko. Freeze while you coat the next batch, keeping all in the freezer until oil is hot.

Heat 1 cup oil (we used avocado) in a heavy-bottom pot over medium heat for about 3 minutes. Fry bites in batches for 2-3 minutes, flipping as the bottoms brown.

Transfer to a paper towel-lined plate, sprinkle with flaky salt. Serve hot and enjoy!

-1/4 jalepeno 
- hot honey (drizzle to you liking)

Steps 
⁃Preheat oven to 400 
⁃Blend Cottage cheese, Grated Parmesan, Egg & Egg White
⁃Mix Dry ingredients in a small bowl and then add the wet ingredients and mix fully 
⁃Pour and spread batter onto parchment paper into an even layered rectangle
⁃Cook for 15-20 Min 
⁃Flip the Flatbread and cook for another 5 min 
⁃Then Layer on Sauce Cheese and whatever toppings of your choice. 
⁃Place back in the oven for 4 min and broil for 1 min 
⁃Drizzle on Hot honey and you are good to enjoy!

RECIPE
🥕Peel 10 medium carrots and set aside 
🥕Prepare the harissa marinade by mixing 2 tablespoons tomato pasta, 2 tablespoons olive oil, juice of 1/2 a lime, salt, pepper and 2 tsp ground cumin
🥕Brush the carrots with the harissa marinade and roast in the oven on a parchment lined sheet pan at 400F for 45-55 minutes until tender and caramelized
🥕While the carrots roast, blend 1 carton 2% milk fat @Good_Culture cottage cheese with juice of 1/2 a lemon, 1/2 tsp lemon rind, 2 tbsp fresh chopped dill, 1 tbsp olive oil and salt and pepper
🥕Spread the cottage cheese mixture on a platter, top with the roasted carrots. 2 tbsp each crushed pistachios and pomegranate seeds, 1 tsp chopped dill and a drizzle of hot honey and serve right away for the perfect holiday side
