A healthier date and banana cake topped with an almond caramel and cashew protein cream.  recipe:  cake:  - 2 cups Medjool dates, soaked in hot water + 1 tsp baking soda for 10 minutes and drained   - 1 cup self-raising flour  - 1/4 cup rice malt syrup - 1 banana, mashed  - 1/4 cup almond butter  - 1 cup soy milk - 1 & 1/2 tsp vanilla extract - 1 tsp baking powder - pinch of salt almond caramel: - 3 tbsp almond butter - 3 Tbsp rice malt strip  - 1/2 tsp vanilla extract  - 1 - 2 tbsp water  cashew protein cream: - 1 cup coconut yogurt  - 1/2 cup cashews, soaked in hot water for 10 minutes and drained  - 1/2 cup vanilla protein powder - 2 tbsp rice my syrup - 1 tsp vanilla extract  other: - dark chocolate chips or shaved dark chocolate  - banana coins 1. Preheat oven to 175°C and grease a cake tin. 2. Finely dice soaked Medjool dates and add to a large bowl. Add the rice malt syrup, mashed banana, almond butter, vanilla extract and soy milk. Mix well.  3. Add the flour and baking powder and mix well. Pour into the cake tin and bake in the oven for 25 - 30 minutes, or until a fork comes out clean. Allow to rest for 20 minutes.  4. Meanwhile, add all the almond caramel ingredients to a small bowl and mix well. 5. Add all cashew protein cream ingredients to a food processor and process until smooth.  6. Remove the cake from the tin and top with the cashew protein cream. 🎬 Welcome to food from your favourite movies, made VEGAN  Ep 3: Grilled Cheese from Chef.  A gooey and creamy cashew cheese sauce in thick slices of perfectly toasted bread. By far the best-grilled cheese I have ever eaten!  What iconic movie dish should I make next?  cheese sauce: - 2 cups cashews, soaked in hot water for 10 minutes and drained - 1 cup soy or oat milk - 1/3 cup nutritional yeast  - 1/4 tapioca flour - juice of one lemon  - 2 tbsp miso paste  - 1 tsp dijon mustard  - 1/2 tsp garlic powder - 1/4 tsp onion powder - 1/4 tsp ground turmeric  - pinch of salt and pepper  other: - olive oil - choice of bread, sliced  - vegan cheddar cheese  - fresh parsley, chopped  1. Place all cheese sauce ingredients into a food processor and process until smooth. Transfer to a bowl and set aside in the fridge for 1 - 2 hours.  2. Heat olive oil in a fry pan over medium. Add two slices of bread, drizzle with a touch more olive oil and toast for 1 - 2 minutes on each side, or until slightly golden. 3. Top both slices with vegan cheddar and cover the pan with a lid for 2 minutes or until melted. Dollop on the vegan cheese sauce on top and cover for a further 1 - 2 minutes.  4. Remove the slices from the pan and flip one on top of the other to form a sandwich. Perfect as an appetiser for dinner parties or as a meal-prepped snack!  What iconic movie dish should I make next?  filling: - 150g baby spinach - 1/3 cup cashews, soaked in hot water and drained - 200g extra-firm tofu, pressed and drained - 1 - 2 cloves garlic - 1 shallot - 1/3 cup basil leaves - 1/3 cup flat-leaf parsley - 1/4 cup nutritional yeast - 1 tbsp tahini - 1/4 tsp garlic powder - 1/4 tsp onion powder - pinch of salt and pepper - 50g vegan feta, diced other ingredients: - 2 - 3 sheets of frozen puff pastry, thawed  - 1 tbsp sesame seeds - 1 tbsp soy milk 1. Preheat oven to 180°C and line two baking trays  2. To a food processor or high-speed blender add all the filling ingredients (except the vegan feta) and process until smooth.  3. Slice the puff pastry sheets into 9 squares (3 columns and 3 rows). 4. For each square, scoop a small amount of filling into the centre and add 3-4 cubes of feta.  5. Pull one corner and the corner diagonally across from it to meet each other and pinch to seal. Repeat with the other two sides.  6. Place the spinach puffs on the baking tray and brush with soy milk. Sprinkle over sesame seeds and bake in the oven for 25 to 30 minutes or until golden brown. 7. Remove from the oven and serve immediately. It’s as simple as pour it, mix it, hack it 🤌 Recipe:  	⁃	250ml soy milk  	⁃	50ml NESCAFÉ Black Espresso Concentrate 	⁃	3 tbsp maple syrup 	⁃	1 tsp miso paste  	⁃	1 tsp vanilla extract  	⁃	pinch of salt  	⁃	1/3 cup ice cubes 	1. Ingredients: pasta:  - 1 cup basil - 1/2 cup parsley - 2 handfuls kale - 2 cloves garlic - 2 tbsp olive oil - 1 tbsp tamari - 300g silken tofu - 1/2 cup nutritional yeast - 1/2 cup tahini  - 1/4 cup pine nuts - 1/4 cup walnuts  - 400g pasta  - 4 tbsp vegan feta - 1 tsp chilli flakes  kale chips:  - 4 cups kale, rinsed and patted dry  - 2 tbsp olive oil - 1 tsp chicken salt - 2 tbsp nutritional yeast 1. Preheat oven to 160°C and line two baking trays.  2. For the kale chips, in a large bowl add the kale, olive oil, chicken salt and nutritional yeast. Massage in to soften the kale.  3. Spread the kale over the baking sheets and bake in the oven for 20 to 25 minutes, or until fully dehydrated and crispy. Remove from the oven and allow to rest for 5 minutes to crisp up.  4. Meanwhile, heat a large pot of water over high. Once boiling, add the the pasta and cook for 10 to 12 minutes, or until al dente. Remove from heat, drain and return to the pot.  5. For the pasta sauce, to a food processor add the basil, parsley, kale, garlic, olive oil, silken tofu, nutritional yeast, tahini, tamari, pine nuts, walnuts and a pinch of salt and pepper. Process until smooth.  6. Pour into the pot of pasta, mix and heat over medium for 5 minutes.  7. 20-minute air fryer banana crumble 🍌 I’m obsessed with quick desserts, especially those that are plant-based and made with healthier ingredients. Switching it up with a banana and tahini caramel base that’s topped with a toasty and sweet almond meal crumble.  base: - 2 overripe bananas, mashed - 4 Medjool dates, chopped - 2 tbsp tahini - 2 tbsp rice malt syrup  - 1 tsp vanilla extract  - 1 tbsp water  top:  - 3 tbsp vegan butter, room temperature (nut butter would also work) - 2 tbsp granulated monk fruit sweetener - 1 tsp vanilla extract  - 1/3 cup almond meal - 1/3 cup vanilla protein powder - 1 tsp ground cinnamon - pinch of salt garnish:  - vanilla coconut yoghurt - shaved dark chocolate  1. In a small bowl, mix the tahini, rice malt syrup, vanilla extract and water to form a tahini caramel.  2. Mash bananas in a 20cm baking tin. Mix in the chopped dates and tahini caramel.  3. In a small bowl, mix the vegan butter and monk fruit sweetener with your hands until well combined. Add the vanilla extract, almond meal, vanilla protein and cinnamon. Mix with your hands until a crumble forms.  4. Top the base with the crumble until it is fully covered. Cook in the air fryer at 180 for 15 to 20 minutes, or until the top is golden. 20-minute air fryer banana crumble 🍌 I’m obsessed with quick desserts, especially those that are plant-based and made with healthier ingredients. Switching it up with a banana and tahini caramel base that’s topped with a toasty and sweet almond meal crumble. base: - 2 overripe bananas, mashed - 4 Medjool dates, chopped - 2 tbsp tahini - 2 tbsp rice malt syrup - 1 tsp vanilla extract - 1 tbsp water top: - 3 tbsp vegan butter, room temperature (nut butter would also work) - 2 tbsp granulated monk fruit sweetener - 1 tsp vanilla extract - 1/3 cup almond meal - 1/3 cup vanilla protein powder - 1 tsp ground cinnamon - pinch of salt garnish: - vanilla coconut yoghurt - shaved dark chocolate 1. In a small bowl, mix the tahini, rice malt syrup, vanilla extract and water to form a tahini caramel. 2. Mash bananas in a 20cm baking tin. Mix in the chopped dates and tahini caramel. 3. In a small bowl, mix the vegan butter and monk fruit sweetener with your hands until well combined. Add the vanilla extract, almond meal, vanilla protein and cinnamon. Mix with your hands until a crumble forms. 4. Top the base with the crumble until it is fully covered. Cook in the air fryer at 180 for 15 to 20 minutes, or until the top is golden. Miso Butter Bean and Roast Veg Salad !! A go-to for healthy lunch meal prep! Combining a creamy and umami miso butter bean dip with roasted vegetables and a fresh kale and cucumber salad.  Recipe (serves 4):  Roasted Vegetable: - 5 potatoes, chopped into wedges - 1 head cauliflower, chopped into florets - 1 x 400g can butter beans, drained and rinsed - 2 tbsp olive oil - 2 tbsp nutritional yeast - 1 tsp smoked paprika - 1 tsp garlic powder - 1/2 tsp onion powder - pinch of salt and pepper Miso Butter Bean Dip: - 1 x 400g can butter beans, drained and rinsed - 1 clove garlic - 1/2 tsp ginger paste - 1 & 1/2 tbsp miso paste - 2 tbsp tamari - 1/4 cup tahini - juice of half a lemon - 1 - 2 tbsp olive oil - pinch of salt and pepper Kale Salad: - 1 bunch kale, stems removed - juice of a lemon - pinch of salt - 1/4 cup parsley, chopped - 1 medium cucumber, diced To Serve (Optional): - tamari almonds, chopped - fresh parsley, chopped - hot sauce - sesame seeds 1. Preheat oven to 200°C and line a baking tray. 2. To a large bowl add all of the roasted vegetable ingredients and toss well. Spread over the baking tray and bake in the oven for 45 minutes, or until the potatoes and cauliflower are tender and slightly charred.  3. Meanwhile, place all of the miso butter bean dip ingredients into a food processor and process until smooth. Transfer to a bowl and set aside in the fridge. 4. Place all of the kale salad ingredients into a large bowl and toss until well combined. 5. To serve, spread the butter bean dip over the bottom of a plate. Top with the kale salad and roasted vegetables.
