Ad GARLIC CHICKEN SKEWERS
 
My go to seasoning to elevate my simple weeknight dinners is always @knorruki Aromat, it perfectly adds a delicious savoury taste to any dish, with its rich umami flavours, I use it in nearly every single dinner I cook because it’s just so good.
 
For two people:
 
For the chicken
- 300g chicken breast
- 2tsp Knorr Aromat
- 1 tsp garlic & paprika
- 1tbsp oil
 
For the potato wedges
- 400g Maris piper potatoes
- 2tbsp Aromat
 
Garlic Parmesan Butter
- 25g reduced fat butter
- 1tbsp crushed garlic
- 15g Parmesan
- Tsp Aromat
 
Cut your chicken in to thin even size strips (this helps it cook more evenly) then combine everything in a bowl and leave the chicken to marinade whilst you prep the potatoes.
 
Cut your potatoes into wedges, then add these to water. Boil for 4-5 minutes, then drain, add to your aifryer basket or oven tray with the Aromat and oil.
 
Cook for 20 minutes in the airfryer or 30 minutes in the oven.
 
Whilst they cook, thread the chicken onto skewers, then cook in the airfryer on the grill setting. Or under your grill.
 
I did them at 190 for 10 minutes, then brushed over some of the garlic butter and cook for around 2-3 minutes.
 
Once everything is cooked add to bowl and brush the remaining garlic butter over the chicken.
 
Serve with some salad and enjoy.

This was SO good & literally the quickest dinner ever to make, genuinely less than 20 minutes 🙌🏼

- Half a diced pepper 
- 1 packet Nandos peri rub 
- 80g Philadelphia light 
- Tbsp Nandos peri peri medium 

To serve/toppings:
- 6 brioche rolls 
- 6 Mozzarella slices 
- 40g grated mozzarella

The garlic butter: 
- 20g butter 
- Tsp parsley 

Dice the chicken & mix with the rub, then fry this in a pan, once it has some colour add in the onion and pepper, cook for 5-6 minutes until the veg has softened and the chicken is cooked through. 

Add the Nandos sauce and Philadelphia to the chicken and stir well.

Layer the bottom of the brioche rolls in a baking dish, top with mozzarella slices, then the chicken mix and sprinkle over the grated mozzarella. Add the tops of the bread rolls, then lather over the garlic butter and pop in the oven for the cheese to melt and go all gooey. Around 10 minutes in total.

Start off by cooking your potatoes, cut them into small cubes, boil for 4 mins, then add all the seasonings and some spray oil and cook in the airfryer for 20-25 minutes until they are nice and crispy. 

For the chicken add this to a bowl with the fajita seasoning and then fry until it has some colour all over. 

Add the veggies and cook until they have softened. 

Once eveything is cooked layer up in bowls!

For the chicken:

- 1 tsp chicken seasoning, onion granules/powder, paprika & parsley 
- 1tbsp honey
- 10g parmesan 

For the potatoes:
- 400g potatoes 
- Tsp smoked paprika, aromat, garlic granules & oregano 
- Tbsp hot honey 
- Tbsp Parmesan 

Hot honey mayo:
- 4tbsp light mayo 
- 2tbsp hot honey 
- 2tbsp sweet chilli 

Cut your potatoes into chips, then add these to water. Boil for 4 minutes, then drain, pat dry and add to your aifryer basket with the seasonings. Cook for 20 minutes and finish with the honey, Parmesan and fresh parsley.

For the chicken cut into thin even size strips (this helps it cook more evenly) then combine everything in a bowl leave the chicken to marinade for 10/15 minutes. 

Once you’re ready thread the chicken onto skewers, I cooked mine in my airfryer, I did them at 190 for 12 minutes. Brush over some of the honey mayonnaise once cooked and sprinkle over the parmesan & parsley.

- Salt & pepper 

For the sauce: 
- 400g potatoes 
- 100g broccoli
- 60ml reduced fat double cream OR reduced fat Alfredo sauce 
- 100g @philadelphia_uki lightest
- 2tbsp lighter butter
- 2 crushed garlic cloves 
- Tsp oregano 
- 20g parmesan

Start off by cooking your potatoes, cut them into small cubes, boil for 4 mins. Drain and then add all the seasonings and some spray oil and cook in the airfryer for 20 minutes until they are nice and crispy. 

Dice the chicken and you then want to add to a bowl with all the seasoning.

You can then cook the chicken however you like. I I fried mine off in a pan until cooked through. 

Whilst the chicken is cooking, boil your broccoli. Once this is cooked add it the pan with the chicken. 

Then crack on with the sauce, add the butter to the pan with your chicken, then fry the garlic & oregano. Fry off for a minute or so, then stir in the cream and cheeses.

Bring sauce to a simmer, once the broccoli is cooked stir this through the sauce. 

Sprinkle in some fresh parsley and serve in bowls with the chicken on top of the potatoes.

- tsp aromat, smoked paprika & garlic granules 

For the tomato salsa

- handful diced tomatoes 
- handful fresh parsley 
- pinch salt 
- juice of half a lemon 

To serve:
- half a mashed avocado 
- 20g hot honey 
- 2tbsp fat free cottage cheese 

Start off by cooking your potatoes, cut them into small cubes, add all the seasonings and some spray oil and cook in the airfryer for 20-25 minutes until they are nice and crispy. 

Add beef to a pan, use a spatula to break up any larger pieces. Then add the seasonings & a splash of water. 

Then just leave this to simmer for 5-10 mins. 

Mix together the tomato salsa ingredients. 

Serve in bowls with the mashed avocado and cottage cheese on top.

- 50g diced chorizo (some on top too)
- 150ml chicken stock 
- 80ml light double cream 
- 20g parmesan 
- 2-3 crushed garlic cloves 
- 1tsp oregano 
- Pinch of chilli flakes 

For the potatoes: 
- 400g potatoes 
- Tsp oregano, aromat, garlic granules & smoked paprika 

Start off by cooking your potatoes, cut them into small cubes, add all the seasonings and some spray oil and cook in the airfryer for 20/25 minutes until they are nice and crispy. 

Add your diced chicken to a bowl & mix with the seasonings. 

Then get a frying pan nice and hot and spray with some oil. Add your chicken and cook for around 5 mins. Add half of the chorizo. 

Then add your garlic, oregano, and chilli flakes. Fry off for a minute or so, then  stir in the chicken stock, cream, tomatoes and Parmesan.

Bring sauce to a simmer and leave for a few minutes. 

In a separate pan or air fryer fry the chorizo. 

Once potatoes are cooked lay these in a bowl, spoon over the chicken and finish with some fresh parsley and parm. And sprinkle over the chorizo.

Start off by cooking your potatoes, cut them into small cubes, boil for 4 mins, then add all the seasonings and some spray oil and cook in the airfryer for 20-25 minutes until they are nice and crispy. 

For the chicken add this to a bowl with the fajita seasoning and then fry until it has some colour all over. 

Add the veggies and cook until they have softened.

STICKY CHICKEN & SALT & PEPPER CHIPS🌶

this dinner is SO good, we haven’t had it in ages so it was time to make it again! 

Chicken:
- 300g chicken breast 
- 1tbsp soy sauce 
- 10g cornflour 
- 1tbsp salt & pepper seasoning 

Sauce:
- Tbsp rice vinegar 
- 3tbsp light soy sauce 
- 1tbsp chilli jam
- 1tbsp honey 

For the veggies & chips 
- 400g Maris piper potatoes 
- 1 diced onion (save half for the chips)
- 1 diced red pepper (save half for the chips) 
- 2 Crushed garlic cloves 
- 1 sliced Spring onions 

For the salt and pepper seasoning:
- 1tbsp sugar 
- 1tbsp sweetener 
- 0.5tbsp salt
- 1tbsp chilli flakes 
- 1tsp garlic powder 
- 1tsp white pepper 
- 1//tsp Chinese five spice 
The above makes quite a lot, so I just add this to an empty jar and save for another time! 🌶🌶

Add chicken to a bowl with some of the salt and pepper seasoning, cornflour and tbsp soy sauce. 

Then add the chicken in a large frying pan in some spray oil, leave it to cook without moving too much.

Then add half of the peppers, onion and garlic. Once the veg softens, add the sauce ingredients. 

For the chips cut potatoes into chips and cook these in the air fryer for 20 minutes. 

Add the rest of the veg to a wok and then when the chips are cooked, add these to the wok with a sprinkle of the salt n pepper seasoning.

- 500g 5% beef mince 
- Half a diced red onion

- Tbsp chopped gherkins 
- 4 Cheesy slices 
- 1/2 tub of passatta 
- Worcestershire sauce 
- 1tbsp American mustard

For the potatoes:
- 500g potatoes (cubed)
- 1tbsp smoked paprika, aromat & garlic granules

Big Mac sauce: 
- 40g mayo (I used low fat)
- 15g ketchup 
- 1tbsp American mustard 
- 1/2tsp paprika & onion granules 
- Tbsp chopped pickles 

Toppings:
- 80g reduced fat cheese
- Shredded lettuce 
- Finely diced onion 
- 2 chopped bacon medallions 

Start off by cooking your potatoes, cut them into small cubes, boil for 4 mins. Drain and then add all the seasonings and some spray oil and cook in the airfryer for 20 minutes until they are nice and crispy.

Next up fry the mince, once browned, add the diced onion, give this a good stir and then add in some salt and pepper. Next add the Worcestershire sauce, gherkins, mustard and tomato puree, mix this well and then add the cheese slices and just leave these to melt down.

Cook the bacon medallions. I do mine in the airfryer.

Add the potatoes to a bowl, top with some lettuce, then spoon over some  of the beef, sprinkle over the cheese finish with bacon medallions, chopped gherkins and a drizzle of the burger  sauce.

- 1tbsp honey
- 10g parmesan 

For the potatoes:
- 400g potatoes 
- Tsp smoked paprika, aromat, garlic granules & oregano 
- Tbsp hot honey 
- Tbsp Parmesan 

Hot honey mayo:
- 4tbsp light mayo 
- 2tbsp hot honey 
- 2tbsp sweet chilli 

Cut your potatoes into chips, then add these to water. Boil for 4 minutes, then drain, pat dry and add to your aifryer basket with the seasonings. Cook for 20 minutes and finish with the honey, Parmesan and fresh parsley.

For the chicken cut into thin even size strips (this helps it cook more evenly) then combine everything in a bowl leave the chicken to marinade for 10/15 minutes. 

Once you’re ready thread the chicken onto skewers, I cooked mine in my airfryer, I did them at 190 for 12 minutes. Brush over some of the honey mayonnaise once cooked and sprinkle over the parmesan & parsley.

- Handful fresh chopped parsley 
- juice of half a lemon
- 1tsp smoked paprika, garlic granules, oregano, cumin & cayenne pepper 

For the tomato salsa 
- half diced red onion 
- Tbsp chopped jalapeños 
- handful diced tomatoes 
- handful fresh parsley 
- pinch salt 
- juice of half a lemon 

To serve:
- pack microwave rice 
- 30g grated cheese 
- mashed avocado 
- Tortilla chips 

Add your chicken to bowl and mix with all the other ingredients, leave this to marinate for a bit and then cook, you can grill this or cook in the airfryer for 20 mins. 

Cook the rice as per packet instructions. 

Once everything is cooked just layer it all in a bowl.

BUFFALO CHICKEN TACOS 

We love a little spice, and if you do too, you need to try these super easy buffalo chicken tacos!

For the chicken:
- 250g chicken thighs or breast
- Tsp smoked paprika, garlic granules & buffalo seasoning 
- Buffalo sauce 
- Fresh parsley 

To serve:
- 6-8 mini tortillas 
- 80g cheese 

Avocado Creme:
- 1 ripe avocado
- 150g fat-free Greek yogurt 
- Juice of half a lime
- 1 crushed garlic clove 
- Small handful fresh coriander 
- Pinch of salt & black pepper
- Splash of water (to thin, if needed)

Add all ingredients of the avocado creme to a blender/ food processor, blend until smooth and creamy, adjust with seasoning to your preference. 

Add your chicken to bowl and mix with the seasoning, then cook this in a large pan in some spray oil. Should take around 7-8 minutes, once done pour over the buffalo sauce. 

Then warm a frying pan over a medium heat, add tortilla to the pan, scatter over some cheese and some red & onion and coriander then some of the chicken, fold in half and repeat with the other tacos. 

Add some of the avocado creme into a small bowl for dipping and add some inside your tacos

This was so good and a nice little twist on the usual baked potato! 

NANDOS LOADED POTATOES 

This recipe is one of my absolute favourites & it’s so popular with my platform members, so I’d thought I’d share here with you guys too.

For 560 cals & two portions:

For the chicken & halloumi 
- 300g diced chicken breast 
- 1 small diced onion 
- Half a diced pepper 
- half pouch Nandos peri rub 
- 2tbsp Nandos medium sauce
- 60g light Philadelphia 

For the potatoes 
- 400g maris piper potatoes 
- Tsp aromat, paprika & garlic granules 
- Nandos peri peri salt 

Toppings 
- 20g reduced fat cheddar 
- 80g halloumi diced 
- Tbsp chilli jam 
- 30g perinaise 
- chopped parsley 

Start off by cooking your potatoes, cut them into small cubes, boil for 4 mins & then add to your airfryer add all the seasonings and some spray oil and cook in the airfryer for 20 minutes until they are nice and crispy. 

Then dice the chicken and coat in the seasoning & sauce.

Fry off the chicken, once it has some colour add the onion and pepper, cook for a few minutes until softened. Then add a splash more peri sauce and the Philadelphia and leave this to simmer and until the chicken is cooked.

Whilst that cooks, add the diced Halloumi to a pan once it’s almost finished and nice and brown on the edges, add the chilli jam and fry for another minute making sure the halloumi is evenly coated. 

Once the potatoes are cooked add these to a bowl, top with the chicken, scatter over the grated cheese. 

Finish with perinaise, the halloumi and parsley!

For the sauce:
- 150g dry pasta 
- 100ml chicken stock/ pasta water
- 80g Philadelphia
- Tbsp hot honey 
- 60g reduced fat halloumi
- 1 small diced onion
- Half a diced pepper
- Handful cherry tomatoes 
- Tbsp tomato puree
- 100g passata

Toppings
- 10g Parmesan 
- Fresh parsley 

Add chicken to a bowl with the seasonings and honey then cook in the airfryer for 10-15 mins.

Whilst that’s cooking, boil your pasta in salted water. I add a stock cube to my pasta water, it adds extra flavour and then you can use the pasta water in your sauce.

In a large frying pan, fry the pepper & onion. Once it’s soft, add in tomatoes, tomato puree, passata and some of the pasta water leave this to reduce slightly before mixing in the Philadelphia. 

Fry off the halloumi in a separate pan, once it’s browned, add in the hot honey.
 
Once pasta is cooked, add this to the sauce with the cooked chicken. 

Serve in bowls with halloumi & parmesan on top!
