5 carrots, ribboned
1/4 red onion, sliced
1/4 cup chopped green onion

2 garlic cloves, grated
Chicken (I used 1 chicken breast, diced and cooked)
2 tbsp soy sauce
3 tbsp rice vinegar
2 tbsp toasted sesame oil
1 tsp honey
2 tbsp sesame seeds
1 tbsp chili oil
1/3 cup cashews, roughly chopped

Ingredientes:

1 cucharada de aceite de chile
1/3 de taza de anacardos, picados gruesamente

~1/2 cup shredded Parmesan cheese
Optional - seasonings
Spray with a little avocado oil and bake for 15-20 mins at 400F!

I paired this with a super high protein chicken Alfredo 🥳 see recipe below!
High protein Alfredo RECIPE:
2 cups cottage cheese (I’m using @good_culture)
2 tbsp melted butter
1/3 cup milk of choice (I’m using lactose free milk from @fairlife)
1/2 cup grated Parmesan
Seasonings of choice - garlic powder, onion powder, salt and pepper
Directions: Blend until smooth, the transfer to a pan and cook on low! I added grilled chicken to this and it was delicious 🥳

Almond milk (I blended strawberries into the milk for color and flavor)
Coconut
Green grapes
Evaporated milk
My homemade condensed milk
If you’re wondering what the texture is like, think milky tapioca pudding or rice pudding. It’s nice and sweet with different textures mmm
I definitely eyeballed everything but I’ll work on getting a recipe with macros for those of you that track. It’ll be on my blog tomorrow.
This recipe isn’t difficult to make, but you’ll definitely need self control lol 😂

TRYING THE VIRAL CARROT WRAPS! 🥕
I saw this low calorie tortilla wrap and had to make it! I think @soufiane.haloui first made it!☺️
This is an easy tortilla or wrap hack that’s low calorie and super delicious! 🤤
Ingredients:
3 large carrots
2 eggs
1/2 cup mozzarella cheese
Onion powder
Garlic powder
Salt & pepper
Directions:
1. In a medium sized bowl, grate your carrots.
2. Squeeze the shredded carrots to get the excess juice out.
3. Add your eggs, mozzarella cheese, and seasonings and mix until it’s well combined.
4. Divide it into 4 parts and place onto a baking sheet lined with parchment paper.
5. Flatten it into the shape of a circle.
6. Bake at 375F for 20-25 minutes.
7. Let it cool for 10 minutes, add your favorite toppings, and enjoy!
You guys… it’s super easy to make and it’s honestly worth all the hype!! It’s so good! 🥰

This is one of my favorite dips especially for summer! (Saw it on @jamesbok page!) I love to serve it with low carb chips, some gluten free sourdough bread, or even bell peppers! 🥰
All you need is:
Boursin garlic and herb cheese
Cherry tomatoes
Red onion
Garlic
Extra virgin olive oil
Balsamic glaze
Basil
That’s it! This took me 5 minutes to make and my family only needed 10 to finish it! 🤣

EGG DROP SOUP!!! 🥚🍲High protein, low carb)

It’s soup season and I’m soooo excited to share this egg drop soup! This is how I make it for my family, and I add chicken to make it a full meal 🥳
Ingredients
8 cups chicken bone broth
2 cups cooked, shredded chicken (rotisserie or prepped chicken breast/thigh)
6 large eggs
2 tbsp soy sauce or coconut aminos
1 tbsp sesame oil
2 tbsp arrowroot starch or 2 tsp xanthan gum (optional for thickening)
1 tbsp chicken bouillon (optional)
1 green onion, finely sliced
Salt and pepper, to taste (or white pepper!)
Optional garnishes: chili oil
Instructions
1.In a medium saucepan, bring the chicken broth to a simmer. Stir in soy sauce and seasonings
2.If desired, whisk the arrowroot or xanthan gum with a tablespoon of cold water, then add to the simmering broth. Cook for 1–2 minutes until slightly thickened. 3. Stir in the 2 cups of shredded chicken and let simmer for 2–3 minutes to heat through. 4. In a small bowl, beat the eggs. Gently stir the soup in one direction, and slowly drizzle in the eggs while continuing to stir. They’ll cook into soft ribbons. 5. Turn off heat. Taste and season with salt and white pepper. Top with sesame oil and green onions!
