🌮 Stacked Birria Quesadillas 🌮 
Serves 12

Ingredients

3-4 lbs beef chuck roast 
8 dried guajillo chilies seeds + stems removed
3 dried ancho chilies seeds + stems removed
2-3 dried pasilla chilies (optional, for earthiness)
3 medium Roma tomatoes (halved)
1 medium white onion (quartered)
6 garlic cloves (peeled)
1 tsp cumin seeds
1 tsp dried oregano (Mexican if possible)
½ tsp ground cloves
2 bay leaves
1 stick cinnamon (or ½ tsp ground)
4 cups beef stock (or water)
2 tbsp apple cider vinegar
Salt + black pepper to taste
2 packages of Sargento® Shredded Cheese with Cholula® Seasoning
6” corn tortillas
Fresh cilantro + chopped onion + lime wedges (for serving)

Method:

Sear the beef: Cut chuck roast into large chunks, season with salt and pepper, and sear in oil in a Dutch oven until browned on all sides. Remove from the pot and set aside.

Sauté the aromatics: In the same pot, add the onion, garlic, chilies, and tomatoes. Cook until softened and lightly charred.

Make the chile paste: Blend the sautéed mixture with cumin, oregano, cloves, cinnamon, vinegar, and a cup of stock or chile soaking liquid until smooth. Strain for a silky sauce if desired.

Build the consommé: Return the chile paste to the pot and cook it down for a few minutes. Add the beef back in along with bay leaves and the remaining beef stock. Bring to a boil, then reduce to low and braise gently for 2.5–3 hours until the beef is fall-apart tender. Skim fat as it cooks, reserving some of the red oil on top for tortillas.

Shred and finish: Remove beef, shred it, and set aside for quesadillas. Strain the broth for a clean consommé, or leave rustic.

🍍🦐 Al Pastor Shrimp Flatbreads 🦐🍍 
Serves 2

1# Wild Caught Shrimp, Peeled & Deveined
½ cup Fresh Pineapple
1 tbsp Chipotle in Adobo
1 tbsp Achiote Paste
Juice of 1 Orange Juice
1 tbsp White Vinegar
1 tsp Smoked Paprika
1 tsp Chili Powder
1 tsp Granulated Garlic
1 tsp Mexican Oregano
1/2 tsp Cumin
1 tsp Kosher Salt
2 tbsp Avocado Oil
Juice of 1 Lime
Your Fav Premade Flatbread
1 Package of Sargento® Shredded Cheese with Cholula® Seasoning
Toppings: Grilled Pineapple, Pickled Onions, Crema, and Chopped Cilantro

Preparation:

Add pineapple, chipotle, achiote, orange juice, white vinegar, dry spices, and avocado oil to a food processor, pulverize into a paste, and pour over the shrimp. Allow the shrimp to marinate for 15 minutes. 

Preheat your grill to 400 F. 

Add oil to a plancha, and saute shrimp for 1-2 minutes until fully cooked.  Remove the shrimp  from the grill, and drizzle with lime juice. Mix well. 

Layer the flatbread with Sargento® Shredded Cheese with Cholula® Seasoning, shrimp, grilled pineapple, pickled onions, and place on the grill until the cheese is nice and melty!

Remove it from the grill, and finish with a drizzle of crema, chopped cilantro, and enjoy!

Carne Asada Sheetpan Nachos
Serves 4-6

2 # Skirt Steak
6 Garlic cloves

1 Large Bag of your Fav Tortilla Chips

Toppings: Guacamole, Pickled Onions, and Lots of Chopped Cilantro

Add garlic, lime and orange juices, soy sauce, sliced onion, sliced jalapeno, spices, and avocado oil to a food processor. Blend up until smooth. 

Pour this over the carne asada, and pop in the fridge for a few hours to marinate. 

Grill the carne asada over a grill for 2-3 minutes on each side to develop a nice char. 

Allow the carne asada to rest, before slicing it up against the grain. 

Add your nachos to a baking pan, and layer with Sargento® Shredded Cheese with Cholula® Seasoning. 

Pop in a 425 degrees oven for a few minutes until the cheese is melted. 

Remove from the oven, top with carne asada, and your favorite nacho toppings!

🔥Pork Birria Grilled Cheese🔥
Serves 4

Avocado Oil
3# Boneless Pork Shoulder
Kosher Salt & Black Pepper
12 oz Bottle of Cholula Birria Cooking & Simmer Sauce
12 oz Water
7 oz Package of Sargento Cholula Natural Queso Quesadilla & Asadero Shredded Cheese
Sourdough Bread
8 oz Bottle of Cholula Cilantro Lime Cremosa Sauce

Preparation:

Hit that pork with a generous sprinkle of salt and pepper on both sides, then sear it in a hot pan with avocado oil until it’s golden and caramelized.
Take the pan off the heat, pour in a full bottle of Cholula Birria Cooking & Simmer Sauce, then fill that same bottle with water, give it a good shake to get all that saucy goodness, and pour it into the pan.

Cover it up with a lid or foil, pop it in the oven at 275°F for 3 hours, and let that magic happen.

Once it’s fall-apart tender, shred it up, spoon in some of that rich spicy braising liquid, and mix it all together. 

Drizzle some avocado oil into a pan over medium heat.

Stack your sourdough with layers of melty Cholula Sargento cheese, that juicy birria-style pork, a little more cheese, and a drizzle of Cilantro Lime Cremoso for that creamy, tangy kick.

Toast it up until the bread’s golden and that cheese is straight oozing. 😮‍💨🧀

Serve it up with that bold, flavorful birria consomé on the side for the ultimate dip-and-drip experience. 🔥
Pro tip: If the sauce is lookin’ a little thick, just splash in a bit of water to loosen it up- keep it dippable, keep it delicious!
