Carrot Cake Cupcakes
Ingredients:
For the Cake Batter:
1 cup (200g) granulated sugar
½ cup (110g) peanut oil, or any neutral oil
2 tbsp (28g) unsalted butter, melted
2 eggs
1 tsp vanilla extract
1 ½ cups carrot, freshly grated
1 cup + 2 tbsp (145g) all-purpose flour
1 ½ tsps baking powder
½ tsp baking soda
1 tsp ground cinnamon
¼ tsp ground ginger
Pinch of salt
½ cup pecans, chopped
For the Cream Cheese Frosting:
3 cups powdered sugar
8 oz cream cheese
2 tbsp butter, softened
1 tsp vanilla extract
Orange food coloring (optional)
Dill or other green herb clippings (optional)
Additional chopped pecans
