Carrot Cake Cottage Cheese Cup
Ingredients
Carrot Cake Base:
• 1 Good Culture single serve cottage cheese cup
• 1/4 cup plain greek yogurt
• 2 tbsp grated carrots
• 3 dates; soaked in hot water for 10 mins & drained
• 1 tbsp maple syrup
• 1/8 tsp pumpkin pie spice
Toppings:
• whipped cream
• pumpkin pie spice
• crushed walnuts
• shredded carrot (optional)
Method:
1. Add all base ingredients to the cup of an immersion blender & blend until smooth.
2. Transfer back to good culture cup and freeze for 25-30 minutes, stirring halfway through.
3. Top with whipped cream, pumpkin pie spice, crushed walnuts, + shredded carrot & enjoy!
